Ryan cooked up some delicious soup with red curry paste the other night. We couldn’t find any egg noodles in Whole Foods, so as requested by Ryan, I got “crinkly noodles.” This was after a little spat on, “Why can’t I just get rice noodles? Or thicker bean noodles? WHY DO THEY HAVE TO BE CRINKLY?!” Seriously. However, I deferred to the cook and just rolled my eyes and went with it… because well, hey, he’s cookin’.

I mean here’s the thing. He was cooking, but I was the one grocery shopping after work. He was at home. And he was dictating to me what he needed, and it’s like… so they don’t have egg noodles, and I call him while I am waiting on line to pay. “I WANT CRINKLY NOODLES,” he says to me. ANYWAY.

Ingredients

6 cups of chicken broth

red curry paste

1 Can coconut milk

Fish sauce to taste

Palm sugar

1 Lime

Chicken breast

1 Can water chestnut

1 Can bamboo shoots

Cilantro

Crinkly Noodles

This is an example of a dish that I absolutely love. I love curry, heartiness, soups, and noodles. Everything I love in the world is in this noodle soup. The end. The broth was delicious. You basically mix in the chicken broth, coconut milk, and red curry paste (to taste). You let that sit, add in the chicken, water chestnut, and bamboo and let it cook together until the chicken is done. Then you add some fish sauce, palm sugar and lime, both to taste. Cook in the noodles in the broth and serve. Garnish with cilantro. It takes a little bit of time, but it is pretty easy to serve up. This makes a lot of curry, so feel free to go with less chicken broth.

We were a teensy bit late, but got there just in time as Conner was searing the huge cut of steak. He sliced it on top of a bed of basil, cilantro, green onion, and mint salad with a tangy thai ponzu sauce over it with cucumbers on the side.

Vicky made some thai green curry with coconut milk, using Ryan’s advice of adding some sugar and fish sauce to taste. She included peppers, bamboo shoots, water chestnuts, and chicken. It was simmering for 3 hours. Amazing. She even brewed some thai ice tea.

Geez, I had a second serving of rice, two scoops of icecream, and… man. Played Munchkins and lost, of course, to the queen of all munckins, Vicky. : P We tried to gang up on anyone ahead, and it turned out to be a LONG game.

Pok Pok is a place in Portland that we HAVE to hit. Their wings are to die for. Ryan and I have not found a single other place that does wings better than this place. I also love their drinks. Designated drivers can enjoy a full menu of drinking vinegar (a sweet and tart drink with soda). I love their Apple Gin Ricky, which features their drinking vinegar and gin. SO. GOOD.

One time, one of my first times there, we went there during the winter. All the other tables inside were taken, so they took us to a private room near the roof with three heaters. It was private, really cute, rustic, and one of the more enjoyable drining experiences.

The waiters are incredibly helpful, and they have a variety of vegetarian and vegan stuff that’s full of flavor. They made a vegetarian curry that had a hearty brother without using fish sauce, shrimp paste, or anything else. Coupled with that and various salads, we ordered a salad, cold noodle dish, a curry dish, and two orders of wings. Then we ordered these gigantic prawns with their heads still on. Amazing. They had an incredibly spicy cilantro dipping sauce, which was icing on the cake. I think Ryan found an additional thing he just “has to get,” now. (One time when we came here last summer with his parents, he just ordered a plate of wings… just for himself… and rice. That’s it. That’s how passionate he becomes about it.)

One of the great finds in the city is within the Chelsea Market located on 75 9th avenue. I love the little pickle cart, seafood, and markets. They have a variety of options! My favorite place to go is Thai Wholesale, which is cheap and delicious. The beef salad and Pad Krow Pow is always a winner. (They even fry an egg on top) Unfortunately, they no longer have fishcakes, but I have never been disappointed by them, otherwise.

I couldn’t even wait to take a picture before eating everything in sight. Am I weird for thinking that it is romantic for the guy to carry floss? (I always seem to need floss)
